Easy Chocolate Cheesecake

1 3/4 cups chocolate graham cracker crumbs
2 tablespoons of sugar
1/2 cup of butter, melted
2 4 oz packages of Baker's German Sweet Chocolate, divided
2 eggs
3/4 cup light or dark corn syrup
1/3 cup heavy cream
1 2/3 teaspoons vanilla
2 8 oz packages of cream cheese, cubed, softened
Pre-heat oven to 325
Combine chocolate graham cracker crumbs, sugar and butter in 9-inch springform pan until well mixed. Press onto bottom and 1 1/4 inches up side of springform pan.
Microwave 6 oz chocolate in bowl on HIGH for 1 1/2 to 2 minutes, stirring halfway through heating time. Stir until complete melted. Place eggs, corn syrup, cream and vanilla in blender container; cover. Blend until smooth. With blender running, gradually add cream cheese, blending until smooth. Blend in melted chocolate. Pour into crust.
Bake 50 to 55 minutes or until center is almost set. Cool on wire rack. Cover; refrigerate 3 hours or overnight. Just before serving, melt remaining 2 oz of chocolate and drizzle over top. Garnish wish raspberries, if desired.
Makes 8 servings, but can easily feed 12.
