
Well, today for the first time, I attempted to make Woopie Pies. For those of you who don't know (which it seems there are a lot of you...maybe it's a Herron family thing?) WP are kinda like Oreo cookies. Only better. Which is saying a lot because Oreo cookies are fantabulous. Especially with milk. Yes. Back to the pies. I'll admit, it was my first time making them, start to finish by myself instead of just helping my mother. I'll also admit, if it wasn't for Karlene's excellent cooking skills, we'd be eating whoopie pie dough with bits of filling in a bowl instead of as a cookie confection. They weren't perfect, but at least they're edible - even if they do have a funky taste to them. (I've just realized that I didn't add the milk to the dough - whoooooops. That really does explain a lot.) Since I've had them before and know what greatness lies in the Woopie Pie, it kinda bothers me, but I hope other people enjoy them. For those who would like to know how to make these wonderful treats here you go:
Woopie Pies - Carolyn Herron
Cookie
Cream: 2 cups of Brown Sugar
1 cup of salad oil
Add: 3 cups of flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
8 large tsp. of cocoa
1 cup of milk
1 1/2 tsp. vanilla
2 eggs
Beat together. Let stand 1/2 hour. Drop by tsp. on greased cookie sheet. Bake 5-8 minutes at 350-375. Makes 4 dozen single cookies, 2 dozen filled.
Filling
5 large T. of flour
1 cup of milk
Cook until very thick, stirring constantly. Cool.
Add: 1 cup of sugar
1 cup of Crisco
1 tsp. of Vanilla
1/2 tsp. of salt
Beat until fluffy, spread between 2 cooled cookies.
To Freeze (best way to eat them): wrap each cake after filling and freeze.
Next time, they'll be really awesome, I swear. I won't forget the milk. T_T
